Winter Indulgence – Pancakes and Berries


With the recipe below, you create a whole pile of delicious festive pancakes, for breakfast or as indulgent dessert! Enjoy the movie, and have a great holiday season!

Ingredients Pancakes and Berries

  • 140 gram oatmeal
  • 3 eggs
  • 3 bananas
  • 2 teaspoon baking powder
  • 200 ml milk (or almond | soy milk)
  • 2 table spoons honey
  • 1 teaspoon cinnamon
  • 1 table spoon grated coconut
  • a pitch sea salt
  • coconut oil or butter
  • 125 gram fresh raspberries
  • 125 gram fresh blueberries
  • maple syrup or date syrup to taste
  • 250 ml whipped cream
  • 3 table spoons “gestampte muisjes”
  • some festive laughter

Recipe Pancakes and Berries

Mix the oatmeal with the bananas, eggs, milk, baking powder, honey, cinnamon and sea salt in the food processor or blender. Mix until smooth. Heat some coconut oil or butter in a frying pan over medium high heat. Pour or scoop the batter using approximately 1 soup ladle for each pancake. ‘American Pancake Style’, they are smaller and thicker than the usual Dutch ones!

While baking the pancakes, whip up the cream, not too stiff (!) together with the crushed anise – “gestampte muisjes”.

Serve the pancakes with the blueberries and raspberries. Pour the whipped anise cream and top it off with the maple or date syrop. Happy Holidays!
